Aloo Potol Posto Recipe is a typical Bengali vegetarian dish made with "Potol" also called as "Parwal" (Indian Gherkin) combined with potato.

Ingredients:
Ivy gourd - 1/4 cup
Potat0 - 1
Coconut - 4 tsp
Green chili - 3
Poppy seeds - 2 tsp
Sugar - 1 tsp
Salt - as per taste
Garam masala - 1 tsp
Ghee - 1 tsp
Oil - 3 tsp
Instructions:
In a mixer jar, add coconut, green chili and soaked(for 15 minutes) poppy seeds. grind to smooth paste and keep aside
In a pan, add oil, sauté ivy gourd , potato until its half cooked
Then add masala paste to it , add required water to it and mix well
Add sugar and salt as per paste and mix
Cover and cook until its
Finaly add ghee and garam masala and serve
