Malabar spinach is a cousin of regular spinach. It is called bachali kura or bachalakura in Telugu. The leaves are slightly thicker than regular palak and has a slightly sticky texture when cooked.

Ingredients:
Malabar spinach - 1 bunch
Toor dal - 1/4 cup
Onion - 1
Tomato - 1
Garlic - 3
Green chili - 3
Curry leaves - 1 string
Mustard seeds - 1 tsp
Turmeric powder - 1/4 tsp
Tamarind paste - 1 tsp
Salt - as per taste
Instructions:
Wash the malabar spinach well, chop it and keep aside
In a pressure cooker add washed toor dal, onion, tomato, green chili and chopped malabar spinach, turmeric powder and required water, cook for 4 to 5 whistles
Once the pressure is out, add required salt and tamarind paste, mash it with a masher, keep aside
In a pan, add oil, mustard seeds, curry leaves and crushed garlic, sauté them
Pout this tadka into mashed spinach gravy and mix well
Boil it for 10 minutes and serve hot with hot rice or chapati
