Bachali Kura from Indian State Telangana

Bachali kura is a traditional Telangana recipe. A simple curry using malabar

Malabar spinach is a cousin of regular spinach. It is called bachali kura or bachalakura in Telugu. The leaves are slightly thicker than regular palak and has a slightly sticky texture when cooked.

Ingredients: 

  • Malabar spinach - 1 bunch

  • Toor dal - 1/4 cup

  • Onion - 1

  • Tomato - 1

  • Garlic - 3

  • Green chili - 3

  • Curry leaves - 1 string

  • Mustard seeds - 1 tsp

  • Turmeric powder - 1/4 tsp

  • Tamarind paste - 1 tsp

  • Salt - as per taste

Instructions:

  1. Wash the malabar spinach well, chop it and keep aside

  2. In a pressure cooker add washed toor dal, onion, tomato, green chili and chopped malabar spinach, turmeric powder and required water, cook for 4 to 5 whistles

  3. Once the pressure is out, add required salt and tamarind paste, mash it with a masher, keep aside

  4. In a pan, add oil, mustard seeds, curry leaves and crushed garlic, sauté them

  5. Pout this tadka into mashed spinach gravy and mix well

  6. Boil it for 10 minutes and serve hot with hot rice or chapati
