Bhutte Ka Kees from Indian State Madhya Pradesh

The word bhutte means corn and kees is a Marathi word for grated. Bhutte ka kees is a very special street food of Indore, Madhya Pradesh India. It is prepared by cooking grated corn with spices and simmered in milk. That’s a very unique way of cooking any savory item and a specialty of this dish.

Ingredients: 

  • Sweet corn - 1

  • Gram flour - 1/4 cup

  • Milk - 1/2 cup

  • Grated coconut - 3 tsp

  • Turmeric powder - 1/4 tsp

  • Kashmiri Chili powder - 1 tsp

  • Chaat masala - 1 tsp

  • Cumin seed powder - 1 tsp

  • Mango pwder - 1 tsp

  • Salt - 1 tsp

  • Sugar - 1 tsp

  • Lemon juice - 1 tsp

  • Mustard seeds - 1 tsp

  • Cumin seeds - 1 tsp

  • Oil - 2 tsp

Instructions:

  1. Grate fresh sweet corn and keep aside

  2. In a pan dry roast gram flour and keep aside

  3. In the pan add oil, mustard and cumin seeds, allow them to crackle

  4. Then add grated sweet corn and saute it

  5. Then add roasted gram flour to it, mix well

  6. Now add milk to it and mix without any lumps

  7. Now add salt and sugar with all spice powders and lemon juice and mix well, cook for 1 minute

  8. Garnish with grated cocnut and serve
