Chicken Chinthamani

Chicken Chinthamani Recipe is a very rustic style of chicken preparation in the kongunad region. There is even a place in Coimbatore called Chinthamani Pudur.

But I am not sure if this dish originated there. Chinthamani literally means a precious stone.

A dry roasted chicken recipe using very few ingredients, is sure a winner. Its a very spicy dish.

Chicken thighs are preferred for this Chicken Chinthamani as it stays juicy after the long roasting in the pan. Sesame oil is the traditional oil used for this recipe and it imparts a deep aroma into this dish. Remember that there aren’t many ingredients in the recipe. The flavor of this Chicken Chinthamani is robust from the sesame oil and the dried chilli.

This recipe is cooked in MINI ROCKET STOVE, which is similar to the normal Rocket stove. But the size will be differed.

Chicken Chinthamani

Course : Starter


Cuisine : Indian


Prep time : 10 minutes


Process time : 20minutes


Total time : 30 minutes


Ingredients:

  • Chicken with bone - 1 kg

  • Onion - 2

  • Dried red chillies - 1/2 cup

  • Ginger -garlic paste - 2 tsp

  • Turmeric powder - 1 tsp

  • Lemon juice -1

  • Salt -as per taste

  • Sesame oil - 3 tsp

Instructions:

  1. Wash the chicken well and keep aside.

  2. Add sesame oil in a cast iron pan.

  3. Add dried red chillies into it, allow it to infuse in the oil.

  4. Add chopped onions.

  5. Add ginger-garlic paste with turmeric powder. Mix well until raw smell goes from it.

  6. Now add washed chicken and mix well.

  7. Add required salt and mix, cover and cook until chicken is cooked completely.

  8. Add lemon juice before servering.

  9. Serve hot with rasam rice.

Grinding the masalas all is been done with amikkal(hand grinder), you can used the powder, to make your dish faster.
