Guddu pulusu is a dish in Telangana. Kodi guddu means "the egg" and pulusu implies a spicy tamarind sauce. As a result, this dish usually consists of boiled eggs cooked in a tangy tamarind sauce combined with spices.
Tamarind pulp (Chintapandu) is the main ingredient in Andhra pulupu kurallu which gives the dish a tangy flavour.

Ingredients:
Boiled eggs - 3
Onion chopped - 1
Tomato chopped - 1
Ginger-garlic paste - 1 tsp
Slit green chili - 3
Tamarind juice - 1/4 cup
Turmeric powder - 1 tsp
Chili powder - 2 tsp
Salt- as per taste
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Curry leaves - 1 string
Groundnut oil - 2 tsp
Instructions:
Boil and peel eggs and keep aside
In a pan add groundnut oil, turmeric powder, chili powder and salt and mix well
Add boiled eggs into it and fry it, remove from the pan and keep aside
Now in the same pan add oil, mustard seeds , cumin seeds, green chili and curry leaves and allow them to crackle
Add chopped onions saute them well, then add ginger garlic paste and mix and cook until raw smell leaves
Add tomatoes to it and mix well
Now add turmeric, chili powder and salt to it and mix well
Add tamarind juice to it and cook for 10 min
Now add fried masala eggs into gravy and mix well
Serve hot
