Hinkejvu is a simple staple dish from Nagaland that is often prepared in households. It is made with colocasia, shredded cabbage leaves, mustard leaves, and French beans, all of which are boiled with some salt to bring out the aromas of the greens.
Naga cuisine is characterized by strong flavors and appetizing aromas. Nagaland is home to 16 major tribes, each of whom have their own culinary practices. This results in a large variety of dishes that are eaten across the state.

Hinkejvu

Ingredients:
Arbi root - 2
Cabbage - 1/4 cup
Wheat flour - 1 tsp
Sesame seeds - 1 tsp
Lemon juice - 1 tsp
Ginger juice - 1 tsp
Honey - 1 tsp
Salt - 1/4 tsp
Oil - 1 tsp
Instructions:
Grate the arbi root, then add wheat flour and salt to it and mix to semi dough, keep aside
In a pan add oil, sesame seeds, cabbage, salt and saute it well
Cook the cabbage till crunchy and keep aside
Now mix lemon juice, ginger juice and honey and mix well, keep aside
In a hot pan spread arbi root dough into small pattices
Cook on both sides
Plate the arbi root pattice on a platet, palce cooked cabbage, pour mixed juice on it
Sprinkle sesame seeds and serve
