Kafuli is a popular and delectable side dish from Uttarakhand cuisine.
The cuisine of Uttarakhand is packed with nutrition, simple and makes use of local vegetables. It is mostly vegetarian. The two regions have different cuisine, thus they have Garhwali cuisine and Kumaoni cuisine.

Ingredients:
Palak - 1 bunch
Onion - 1
Tomato - 1
Garlic - 3
Cumin seed - 1 tsp
Hing - 1 tsp
Turmeric powder - 1/4 tsp
Chili powder - 1 tsp
Salt - as per taste
Ghee - 2 tsp
Instructions:
Wash and chop palak leaves, add them into pressure cooker with garlic and turmeric powder, add required water and pressure cook for 3 whistles
Once pressure is out, cool down and grind to smooth paste, keep aside
Now in a pan add ghee or oil, cumin seeds and hing, allow them to crackle
Then add onion and tomato, sauté it well until they turn mushy
Then add chili powder and salt as per taste and mix well
Now pour the blended palak puree to it with required water, mix well
Boil for 10 minutes and serve hot with rice or roti
