Pitha is a rice cake or pancake, a thin-flat cake prepared from a batter and cooked on a hot griddle or frying pan. It is an inseparable part of Jolpan in Assam.
Khola Sapori Pitha is a traditional Assamese pancake prepared out of rice-flour. It pairs well with dry subzis.
In Assam, pitha is a special class of rice preparation generally made only on special occasions like Bihu. Assamese pithas are often made from bora saul, a special kind of glutinous rice, or xaali saul, or sun-dried rice. Some pithas commonly found in Assam.

Ingredients:
Sticky Rice flour - 1 cup
Sugar - 3 tsp
Salt - 1 tsp
Water - 1/2 cup
Instructions:
In a bowl add rice flour, sugar and salt, mix
Pour water little and mix until it forms a thick pouring batter
In a hot pan, pour the batter like pancakes and cover and cook
Serve hot with curd
