Kodo Ko Roti from Indian State Sikkim

A typical pancake made from finger millet locally called Kodo in sikkim, served with different varieties of pickles.

Ingredients: 

  • Ragi flour or pearl millet flour - 1 cup

  • Brown sugar - 1/2 cup

  • Milk - 1 cup

  • Baking soda - 1 tsp

  • Salt - 1 tsp

  • Oil - 2 tsp

Instructions:

  1. In a bowl add ragi flour, brown sugar, baking soda & salt, mix well

  2. Pour required milk to the mixed flour and mix into thick batter without any lumps

  3. Now pour the batter on the hot tawa, apply oil on it, cover & cook, flip & cook again

  4. Serve hot with any pickles
