Kothimbir vadi is a delicious savory crisp snack from the Maharashtrian cuisine.
In Marathi language “kothimbir” or “kothmir” stands for coriander leaves. The word ‘vadi’ means cubes or slices or wedges. So these are basically steamed coriander and gram flour cake cubes that are fried.
LETS GET COOKING:
Kothimbir vadi

Total time : 30 minutes
Ingredients:
Coriander leaves - 1 bunch
Green chili - 2
garlic - 3
Cumin seeds - 1 tsp
Sesame seeds - 1 tsp
Rice flour - 1 /2 cup
Salt - as per taste
Oil - to fry
Instructions:
Wash and chop the coriander leaves finely
In a motor pestle, crush, green chili, cumin seeds and salt, crush to coarse paste
Add this paste to chopped coriander leaves
Then add rice flour, salt and sesame seeds and mix
Sprinkle sesame seeds on steamer plate, Shape them into desire shape and steam them for 5 minutes
After steaming, cut them into small square shape
Then deep fry this steamed cakes, until brown on all sides
Strain and serve hot
