Lilva ni kachori is a delicious winter snack made with fresh tuvar (green pigeon peas). These fresh tuvar beans are called as lilva in the Gujarati language and hence the name lilva kachori. This lilva kachori recipe gives you one of the best kachori with a flaky crisp crust and a soft, lightly spicy, sweet and tangy filling.

Ingredients:
Wheat flour - 1 cup
Peas - 1 cup
Ginger-green chili paste - 1 tsp
Coriander leaves - 3 tsp
Cumin seeds - 1 tsp
Sesame seeds - 1 tsp
Ajwain -1 tsp
Hing - 1/4 tsp
Coriander powder - 1 tsp
Dry mango powder - 1 tsp
Turmeric powder - 1 tsp
Dry grapes - 7
Cashews - 5
Lemon juice - 2 tsp
Oil - 1 cup
Salt - as per taste
Instructions:
Knead the wheat flour with salt, turmeric powder, ajwain into soft dough by adding required water, cover and rest, until we make filling
Grind the fresh peas into smooth paste
For filling- add oil in a pan, once heated add cumin, sesame seeds allow them to crackle, then add ginger-green chili paste, sauté them well
Add green peas paste to it and mix
Now add coriander powder, dry mango powder, turmeric powder, Hing , dry grapes, cashews, chopped coriander leaves, lemon juice and salt as per taste and sauté them until aromatic
Allow the peas filling to cool down
Roll out wheat flour dough thin, cut into round shape
Take each shape and fill with peas masala, seal the corners
Deep fry them in oil
Strain and serve hot with tea
