Palada Payasam - kerela

Payasam prepared with palada (rice ada) is common sweet delicacy prepared in almost all Kerala households during festival of Onam and many other occasions. There are many variations of it, it uses only basic ingredients like rice ada, milk, sugar and ghee to make best palada payasam.

Ingredients:

  • Rice ada - 1 cup

  • Milk - 1 cup

  • Sugar - 1/2 cup

  • Cardamom powder - tsp

  • Ghee - 2 tsp

Instructions:

  1. In a sauce pan, add ghee , then add rice ada and fry them for 1 minute

  2. Now add milk to it and start cooking them until it turns soft and thick

  3. In other pan, add milk and bring to boil until it reduces half the quantity, keep scraping creams around the pan and mix with boiling milk, then add sugar to the boiled milk and cook again. Now add cardamom powder to it and mix well

  4. Now add the cooked rice ada to the boiled milk and mix well

  5. Serve hot or chill
