Pav Bhaji from Indian state Maharashtra

Pav bhaji is a street food dish from India consisting of a thick vegetable curry (bhaji) served with a soft bread roll (pav). It originated in the city of Mumbai.

The dish originated as a fast lunchtime dish for textile mill workers in Mumbai. Pav bhaji was later served at restaurants throughout the city. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad.

Ingredients: 

  • Vegetables of your choice(carrot, beans, cauliflour,potato) - 1 cup

  • Capsicum - 1

  • onion - 1

  • Ginger garlic paste - 1 tsp

  • Turmeric powder - 1/4 tsp

  • Chili powder - 1 tsp

  • Butter - 1 tsp

  • Bun - 2

for bhaji powder

  • Cinnamon - 1

  • Cloves - 3

  • Cardamom - 2

  • Fennel seeds - 1 tsp

  • Cumin seeds - 1 tsp

  • Pepper - 1 tsp

  • Bay leaf - 1

  • Dried red chili - 1

  • Mango powder - 1 tsp

  • Black salt -1 tsp

  • Salt - 1 tsp

Instructions:

  1. In a pressure cooker, add mixed vegetables of your choice with salt and required water, cook for 3 whistle, once pressure down, mash the vegetables and keep aside

  2. In a pan, dry roast all spices given for bhaji powder, cool down hen add into mixer jar with mango powder, balck salt and salt and grind to fine powder

  3. In other pan, add oil, chopped onion saute it well, then add ginger-garlic paste and saute them until aromatic, then add capsicum and saute all again

  4. Add chili powder, turmeric powder, bhaji powder and salt as per taste, saute again until aromatic

  5. Pour the cooked mashed vegetables stock into it and mix and boil for 10 minutes

  6. Add butter to it and off the flame

  7. In a pan toast the bun with butter

  8. Serve hot with pav and bhaji
