Pukhlein is powdered rice flavoured with jaggery. In the pan, the jaggery and rice combination are cooked together to make a deep, thick paste. The golden brown crispy rice pairs well with a range of meat dishes and provide a pleasant relief from the spiciness of Meghalayan cuisine.

Ingredients:
Rice flour - 1 cup
Jaggery syrup - 1/2 cup
Baking soda - 1 tsp
Salt - 1 tsp
Oil to fry
Instructions:
In a bowl add rice flour, baking soda , salt and mix well
Then pour jaggery syrup to itr and mix without any lumps
Batter should be thick
Pour the batter in the centre of hot oil, fry
Strain and serve
