Ragi walnut cupcake |ராகி கப் கேக்

These ragi cupcakes are so simple to prepare and taste very delicious. It is a great tea time snack and also perfect for all get together. If preferred, you can decorate it with delicious buttercream frosting to make it more rich.

LETS SEE HOW TO PREPARE:


Ragi walnut cupcake |ராகி கப் கேக்

Cuisine : Indian


Prep time : 5 minutes


Process time : 20 minutes


Total time : 25 minutes


Ingredients:

  • Ragi flour - 1/3 cup

  • Wheat flour -2/3 cup

  • Ripe banana - 2

  • Baking soda - 1/2 tsp

  • Baking powder - 1 tsp

  • Salt - 1/4 tsp

  • Broken walnut - 2 tsp

  • Brown sugar - 1/4 cup

  • Milk - 1/4 cup

  • Eggs - 1

  • Vanilla essence - 1 tsp

  • Oil - 1/8 cup

Instructions:

  1. In a bowl add ragi flour and wheat flour. Then goes the brown sugar.

  2. Then add baking powder,baking soda and salt and mix well.

  3. Now add vanilla extract to it, with oil, milk, crack open the egg and mashed banana gently, mix the flour in cut and fold method.

  4. Now add broken walnuts to the mixed batter and again mix them slowly.

  5. Pour the ragicupcake batter into the cupcake lined tray.

  6. Pre-heat the oven in 180 degree for 10 minutes.

  7. Place the cupcake tray into the oven and bake them in 180 degree for 20 minutes.

  8. Once cool down can serve them with butter cream frosting or with whipped cream, here i have left plain.

  9. Store them in air tight jars, can stay outside for 2 days.

NOTE : Each oven temperature differs, always keep an eye on your oven weather the cakes have been baked, if not baked can extend the time by 10minutes.
