Shahi Shikanji from Indian State Madhya Pradesh

Shikanji is usually the name used for salted lime water in most of the parts of India, but this one is totally different. It doesn’t even have the use of lime, and moreover is so “Shahi” aka royal, in its usage of thickened milk, yogurt and spices.


LETS GET COOKING:

Prep time : 10 minutes

Process time : 10 minutes

Total time : 20 minutes

Ingredients: 

  • Milk - 1/2 litre

  • curd - 1/4 cup

  • Sugar - 1/2 cup

  • Saffron - pinch

  • Almonds - 1/4 cup

  • Chopped nuts - 2 tsp

  • Cardamom - 2

Instructions:

  1. In a boiling pan, boil milk until it reduces to half. In a small cup, add saffron, then pour 2 tsp of boiling milk, mix and set aside for 2 minutes, then add safforn milk to it and mix

  2. Cool down the boiled milk

  3. In a mixer jar add curd, sugar, skin peeled almonds, half of boiled milk and grind coarse

  4. Then add remaining half boiled milka and grind to smooth, then pour into serving bowl, add chopped nuts and cardamon

  5. Serve chill
