The name Xutuli is derived from the traditional musical instrument with the same name, that is shaped like half-moon. The sesame seeds filling is made for the harvest festivals and also during winters as sesame seeds are rich in fibre and helps blood formation.
Xutuli pitha is both little sweet and a little nutty in taste also very light on the tummy making it a great tea time snack.

Xutuli Pitha

Ingredients:
Sticky rice flour/ Rice flour - 1 cup
Black Sesame seeds- 1/2 cup
Brown sugar - 1/4 cup
White sugar - 3 tsp
Baking soda - 1/2 tsp
Salt - 1 tsp
Sesame oil - to fry
Water - 1 cup
Instructions:
In a glass of water, add salt and white sugar and mix until they are dissolved
In a bowl add sticky rice flour or normal rice flour with baking powder and salt, mix , then pour dissolved into it, mix the flour into soft dough. Cover and keep aside
In a hot pan, dry roast black sesame seeds, until they pop, and bring them to room temperature
In a motor - pestle, add roasted black sesame seeds with brown sugar and grind coarse , take them into other bowl
Now take soft sticky rice dough little, make a flat shape and add the sesame seeds filling into it and cover them in boat shape.
Fry the shaped sticky rice boat shape dough into hot oil, fry until cook
Serve hot with coffee or tea
